Bottle 1:             
2012 Teroldego: Our very last pair of cases of this wine. What an absolutely gorgeous beast that has now reached its zenith. Pair with Moussaka with the eggplant fried in the good olive oil before slow baking. Bellissimo!
 
Bottles 2-3:       
2011 Allouran:  This was a warm vintage, and the wines made were rich and full showing all the best characteristics of a great year. Aged now for 14 years it has blossomed into a superstar. Slow cooked beef stew – 1 cup for the stew and the remaining bottle and 2/3rds to make it through the meal.
 
Bottle 4:             
2022 Shiraz: This wine is such a little cracker that we forget just how damn good it really is. Get some chicken thighs, parmesan cheese, red onions and parsley filling and wrapped in bacon – roast for 30 minutes, cook the sliced potatoes in cream, butter and thyme at the same time and my gosh you are spoilt.
 
Bottle 5:             
2018 Reserve Merlot: I feel obliged to share this with you all – what a wine, what an amazing wine. Soo rich and soo deep and just breaking into the secondary flavours. A bit fancy, but that’s Sunday beef roast sorted, make the gravy with the scrapings and don’t forget a splash of balsamic vinegar.
 
Bottle 6:             
2022 Deux Écus: Some of you may have these bottles safely stored away, some may have thought it was a bit exxy, but here we all have a chance to crack open a bottle and just savour one on the best wines I have ever made. You can drink it as a stand-alone, but the texture of the wine suits a lamb roast, medium rare, stuffed with dates and nuts and lashings of roasted vegetables (beetroot roasted for the win!). It is a shame not to be able to have this wine at a young age, all that youthful exuberance and fruit, so here is your chance to treat yourselves.
